10 Minute Healthy Lentil Curry
After a long day at work, the kids are hungry, YOU are hungry
But there is soccer practice,
and maybe some me time would be nice.
Dinner has to happen, we want it to be an enjoyable meal where we sit down together before the nightly activities. So how do we do it all, get the kiddos where they need to go, make dinner and make sure it’s healthy?

10 minutes to a beautiful spicy meal, full of fats to and warm enough to make even that fall breeze feel cosy
3-5 Veggies of choice ( I usually do broccoli, water chestnuts, celery, okra and cherry tomato)
Handful of spinach
1 cup coconut milk
Option to give more of a kick paprika
2 tablespoons tahini
salt and pepper to taste
What to DO ?
Simmer veggies and spinach on low with water or veggie broth until soft
Add coconut milk, tablespoons turmeric, cumin, olive oil cook on low stirring frequently for about 5 minutes
Add Tahini cook low to medium for about 5 min stirring as you go the tahini makes it thicker, remove from heat at desired thickness
Unsweetened Coconut yogurt dollop
add nutritional yeast if you want more of a cheesy taste
