Ingredients:

  • Kale
  • Parsley
  • Oil
  • Tomato
  • Palm hearts or artichoke
  • Avocado
  • Cucumber
  • Olives
  • Pumpkin seed

Salad:

  1. In a pan add a few drops of oil ( I used pumpkin seed oil ) and water.
  2. Add asparagus, cook on low until soft
  3. Add Chopped kale and parsley
  4. Cover on low until wilted
  5. Place in bowl
  6. Top with your choice of ingredients; I used cucumber, cherry tomato, black olives, heart of palm and avocado
  7. Drizzle tahini dressing
  8. Top with pumpkin seeds
  9. Add a teaspoon of Hummus

Tahini Dressing Recipe

Add one tablespoon of tahini into bowl

Add cumin

Pink hymnalian salt

Black pepper

Apple cider vinegar ( 1/2 teaspoon)

Oil of choice ( I used pumpkin seed)

A few drops of lemon juice

Option: 1/2 teaspoon of mustard for a kick ( I like this in the summer)

Key to dressing !! Add a few drops of hot water, this is what makes the tahini pourable

Mix with spoon

Drizzle on salad

Enjoy every last bite
