Chickpea Cookie Dough
Do you remember baking with Mom and grandma as a child,
mixing all of the ingredients in a big metal bowl,
whisking them together into a big ball of sticky, cookie dough
One that looked so inviting,
just begging those little fingers to reach in and steal a pinch
when Mom’s head was turned, you made your move
Grabbing a quick pinch and popping it into your mouth, as the tasty dough melted on your tongue
But the scowls always came ” DON’T eat the cookie dough, it will make you sick”
How did she always see, did mom really have eyes on the back of her head?
WELL guess what
those days are DONE.

How to Make It
Mix first six ingredients in a food processor until the chickpeas are completely blended and smooth. Stir in chocolate chips.
For bars or cookie dough truffles, line a glass dish with parchment paper and put in the freezer for 45 minutes. Once removed from the freezer, let the cookie dough thaw for 5 minutes. For an extra indulgent treat, drizzle them with melted chocolate, and sprinkle flaked sea salt on top

Bake at 350 degrees for 8-12 minutes for tasty cookies !
