I love changing up my morning routine or celebrating holidays by whipping one of my favourite breakfasts pancakes. Now that fall is creeping up, another one of my fave’s is making an appearance… PUMPKIN.

So how does one combine all her fave’s while making it guilt free and STEVIA&SPICE APPROVED?

By experimenting in the kitchen to bring you the most SIMPLE, sugar-free, game changing pancake recipe.

WHAT YOU NEED 

WHAT TO DO  

  1. Combine all the ingredients in a blender. Blend until smooth.

  2. Preheat a nonstick pan over medium high heat or add some coconut oil to pan to prevent sticking. Once hot, scoop the mixture. Cook for 1-2 minutes or until you can easily slide a spatula underneath. Flip. Cook for another 1-2 minutes on the second side. DO NOT OVERCOOK

  3. Now top with all your faves; I used ghee, cinnamon, walnuts and nut butter on the regular pancakes & warmed strawberries and unsweetened coconut on the cacao version.. Get creative !

    STEVIA&SPICE PRO tip: this recipe made soo many that I had tons of extra batter… so I did what any savyy cook would do, I got creative. I turned the batter into little balls and tossed it in the freezer to make the most mouthwatering treat balls that taste like chewy fudge. If you guys do the same try tossing some nuts, coconut or nut butter into the mix for some added tastiness to your balls 😉
