From The First Leaf falling to the Thanksgiving day feast

Pumpkin everything is a staple.

The Perfect depiction of all the things we love about this time of the year. The Vibrant colours, cool weather and spicy taste of that first bite of pumpkin pie.

No Need to miss out on that joy, when we can have a sweet Stevia&Spice approved pumpkin treat

Pumpkin butter Bites

1 cup gluten-free rolled oats

1 tbsp of cinnamon 

1 tsp of ground ginger

1/4 tsp of each nutmeg and cloves (or all spice)

1/4 tsp pink sea salt

1 454g can of  pumpkin puree

1 jar of unsweetened pumpkin seed Butter

1 -2 tablespoon of stevia if desired ( depends how sweet you desire)

Flaked unsweetened coconut (for garnish)

In a food processor, combine the oats, cinnamon, ginger, all spice, and salt and pulse into coarse pieces (doesn’t have to be super fine). Then, in a mixing bowl, mix together the pumpkin puree, Pumpkin butter and stevia Finally, add the ground oat mixture into the mixing bowl and mix together until a dough forms. Using tbsp size scoops, form balls into your hand and roll in flaked coconut. Refrigerate for at least 30 minutes prior to enjoying!
