Christmas is one of my Favourite times of the years

Deckin’ the halls to carolling; every moment is filled with joy and bliss.

But one of my favourite things to do is go to Christmas parties, getting dolled up, putting on my favourite red dress and spending a night sharing laughs and memories with those I adore.

But if you guys are anything like me, you usually commit to bringing something to the party, you know an app or a dessert. Then realize the day of, you have nothing….

the big choice must be made… buy or bake?

But ’tis the season right… so we pull out the bakeware and opt for something from the heart… as long as it takes 10 minutes or less…

& of course is Stevia&Spice approved

So here is my go to simple dessert for the holidays

Christmas Pumpkin Spice Bars

Ingredients

Crust

1 1/2 cup pecans

1/4 cup shredded coconut unsweetened

3 tablespoons of ground flaxseed

1 tablespoon cinnamon

1/2 tablespoon allspice

1 teaspoon pure vanilla

1/4 teaspoon Himalayan sea salt

2 tablespoons melted coconut oil

1 tablespoon water

1 cup nut butter or seed butter unsweetened

Option: 2 tablespoons coconut flour 

Filling

2 cups of raw cashews

1/4 cup melted coconut oil

1/4 cup aquafaba ( liquid from chickpeas)

1 Can unsweetened coconut milk

1 1/2 teaspoons vanilla extract 

1/2 teaspoon nutmeg

1/2 teaspoon cinnamon

Directions

  1. Place all crust ingredients in food processor
  2. process until smooth
  3. spread into 9×9 tray
  4. place in fridge to chill
  5.  Next blend all filling ingredients
  6. Pour over top of chilled crust
  7. Chill for 3-4 hours
